Vegan Elachi | Coconut Milk Flavored Steamed Nuts Cake

An Indian flavored cake was in my to do list for a long time, as we mix cardamom, coconut milk n nuts in most of our desserts, why not to implement the same in a cake? this raised in my mind. Recently my daughter asked for a cake, as I am tired with other works I don't want to stress much by making the cake in huge quantity. So I tried it with very usual ingredients from the kitchen pantry. Misal Pav with Homemade Pav Buns | Popular Street Food All From Scratch

The south Indian team are challenged with Misal Pav and North Indian team with Methu Vada for this month Divya's SNC. Thanks Meena  for giving the Misal pav recipe in detail. Misal pav is a Maharastrian street food popular countrywide which is very healthy n nutritiuos. Pav is a Maharastrian word which means small loaf bun and Misal means spicy curry made with any dried beans/Peas and masala. So Misal pav is the combo of Pav bun, Misal/Gravy/Curry garnished with Mixture/Savory and chopped onions/coriander leaves. You can use store bought Buns and fried Savory snack too, but I did everything at home the Pav buns/Mixture/Farsan/Curry etc. After all this work I really satisfied with the taste and my lil daughter enjoyed it much. She nowadays started saying "Yummy" when she really likes it and this recipe is one among it where I got appreciation from her :-).  I got 2 Sunshine awards from my blogger friends thanks Asiya n Yasodha for sharing those awards. Checker Board Cake with Chocolate n Yellow Cakes

I prepared this checker board first time for the neighbor aunty who returned back last month to her homeland after 6 months of vacation. She loves cake so I planned this checker board cake. I don’t hv special checker board cake pans or round cookies cutters. I searched in google, youtube n finally landed here. I decided to give a try by cutting the baked goodies using knife or bowl. Then I started baking with fun n ended up with cute cake. Yup I messed 1 layer, as the cake were so soft while cutting they broke at some places n somehow managed it J. Wow the final outcome was just amazing; really it was beyond my expectation. The fun continued again as I made the same cake for hubby’s colleagues. This time the checker board was so perfect, only I clicked the whole cake that too early morning before he starts to office, so got dull picturesL. They all liked the cake very much, I asked to click the cake slices, so my H clicked in mobile and the pics were not clear L. This month for baking partners challenge I got mail to make Neapolitan/nuts cake/plum cake. I don’t want to make a 3rd cake in a very short time so I asked Swathi the master brain, whether I can post this recipe, immd she said ok, thanks Swathi for agreeing n giving such a wonderful task. Eggless Rasmalai from Scratch

This is the first paneer recipe in my space, so I started it with a heavenly Bengali dessert Rasmalai. Today I am here with why not to use half n half or heavy whipping cream while making paneer/chenna. Only whole milk curdles with lemon juice/yogurt/vinegar, whereas the ultrapasturised half n half or heavy whipping cream does not work.  If u add even half a cup of those to regular milk that half n half remains the same n never curdle. If any low fat milk is used u don’t get much paneer in that. So after these experiments I am suggesting to go with Whole milk. Ras means Juice/Juicy n Malai means milk cream in English. Actually I prepared this for Diwali with other sweets n savories. So here is an eggless version of Rasmalai recipe from scratch…

Chocolate Cream Cookies | Eggless and Reduced Fat Version

I had my routine health checkup months back. The very friendly staffs treated my kids with pumpkin frosted cookies n chocolate chip cookies. I never failed to taste those after coming home, hmm as a blogger/baker immediately tried both at home. Both were success in my first attempt itself n already posted the Pumpkin frosted cookies. The second one it says chocolate chips but couldn't find any whole chips to bite, so I adapted my Old fashioned cookies recipe n its truly delicious. I prepared it several times as snack for weekend day out but couldn’t find time to click it…At last I made it J by filling whipped cream in between cookies like sandwich spread. Simple to make n I assure that you never go wrong anywhere…

Baked Egg Bonda | Savory Boiled Egg Muffins

Egg bonda’s are famous in the cinema theaters where we born n brought up. During my childhood days watching movies in theaters was the only media entertainment we (me n my cousins) had. Only Moms organize these sort of outing so before entering and leaving the theater they used to count us not to miss anyone, funny right , yup wherever we go we show our mass such a big family is ours. During interval we get one big hot egg bonda for each to bite. I remember that each bonda had one full egg in it, tastes heaven. The healthy competition begins there, those who keep at least a bit of bonda after the movie climax is the winner, such sweet memories and badly missing all those now :-( . Now coming to today’s recipe this is not that deep fried bonda, same pattern but baked version.

Gulab Jamun from Scratch | Milk Powder Jamoon Recipe From Scratch

Usually I prepare this spongy jamuns with store bought jamun mix, which simplifies the kitchen work during Festive/Party time. But after becoming a food blogger, this is the first challange I am participating for Divya's South VS North India challenge. I hv commited to 2 challenges per month one is Baking partners n another one is this challenge. I am the part of South Indian team and for the SI group this month challenge given by NI team (Pallavi) is Gulab Jamun recipe using milk powder. She shared her recipe while Yasodha challenged NI team with Adhirasam. Thanks Pallavi, for sharing this gulab jamun recipe, I thought of following her way but adapted a bit. I had some leftovers like fresh homemade paneer with moisture n half n half milk so I used it for making the dough. My jamuns popped up well n turned out super spongy (my pictures reveal that). The jamuns were absolutely delicious n my kids thorougly enjoyed it. Yields 35-40 medium size jamuns for the below quantity . Will move on to the detailed recipe...

Pori Urundai | Karthigai Deepam Special

Karthigai/Thiruvannamalai Deepam is basically a Tamil festival and is virtually unknown in most other parts of the country. Karthigai is celebrated on the full moon day (pournami) of the Tamil month of Karthigai which is essentially a festival of lamps. During my childhood days me and my brother first light tray of lamps in the nearest temple and then start lighting home. Eggless Stuffed Dinner Rolls | Soft Potato Stuffed Spicy | Khara Buns

This is the first time I entered in Baking Partners challenge and this month challenge given for us was to make dinner rolls with eggs or eggless, as Thanksgiving Day is approaching. Swathi of Zesty SouthIndian Kitchen, creator of monthly baking event shared us 7 types of dinner roll shapes and asked us to try at least 3 among them. She explained the challenge in detail. I tried both egg less and rolls with egg version. Today I am posting egg less version with stuffed lion house rolls, braided roll using maida and multi grain flour, tomorrow will publish the other one. The original recipe without egg had potato flakes, I used cooked potato instead. The rolls were so soft, tasted buttery and was so delicious. We the whole family enjoyed it n prepared it 2 times before posting here. I have given the tastier n healthier recipe in detail from scratch, will move on to the recipe in detail.

Milagu Kaara Sev

Diwali is not complete without potluck and get together on coming week end right? Eggless Chocolate Chip Cake & Old fashioned Cookies

Baking gives lot of experience...Usually I  bake 2 or 3 varieties at a time with like oven temperature(becoz of large oven...) One day I did puff, chocolate chip cookies and white cake for Tiramisu, when doing all, with kids disruption n bulk work, I messed up the cookie batter to bit flowing consistency as such as cake batter. I worried when poping in the oven, becoz the roung shaped cookies all joined together n formed a thin layer cake :-) With halfmind started tasting the baked goodies, wow, unbelieavable, surprisingly the messed batter turns delicious :). Really a super moist cake, we all enjoyed it, especially my kiddos liked it very much. So from that day I started making chip cakes instead of cookies. Both cookies and cake uses the same ingredient with slight modification, so today's recipe is none other than these two...

Soft Jangri | Perfect Jalebi using Mixie | Step by Step Recipe from Scratch

Great fans are there in each and every home for mini soft Adyar anandha bhavan Jangris. We never get this softer urad dhal version here in stores, only crispy jelebis with red and yellow maida flour based versions are freshly available. Even we call this softer version as Jelebi/Jalebi in our place. A year back when MIL came here she bought it from ananda bhavan that was the last tasted till yesterday. Whenever I go to Indian stores I search for fresh sweets and end up in getting frozen in the name of "Jalebi", but not worth i feel so. I thought of trying it at home and discussed with Mom in call, she gave me the ingredients and some tips, also I remembered MIL’s tips when making medhu vada. But I totally forget the shape how it looks so searched in google images, took some designs, tried it out in papar before playing with batter he he he…When comes to grinding the batter in mixie, I searched for such a recipe with blender/mixer but couldn’t find anything, suddenly it striked my mind, why not to use cake beater/mixer here to aerate the batter, is that only for cake

Eggless Pumpkin Shaped Sugar Cookies with Pumpkin Sugar Icing

This is the apt recipe to share during Halloween I believe. I used cardboard to make pumpkin shape and tapped using knife. Even you don't need piping bag or tool tips to decorate the cookies, I applied frosting by making small hole in the ziploc bag and also uses toothpick to fill the icing over cookies, so easy n interesting indeed? Yucca has many health benefits on its own, which is widely used/available in all countries. Already I came out with yucca bonda, a soft version n now its time to post the crispier version, yucca vada. Usually I do this vada by grinding yucca + soaked chana dhal with some spices. Recently we had family friends get together n our neighbor prepared this vada, so I got this idea from them n adapted it. No need of onion/ ginger/ garlic, a very simple n tastier version which can be prepared in jiffy for unexpected guest at home…This is the first snack my son tasted on his own J.

Puffed Rice n Peanut Sundal | Beach Style

Raw mangoes on season, it reminded the beach sundal so grabbed it from store. I was in Chennai for few yrs. In beaches we get two options from street sundal seller either puffed Rice/masala sundal or the plain peanut sundal, so today's recipe fall on both these categories...Whenever I visit, I prefer to have plain peanut sundal. Frequently make without mango but if possibly substitute all ingredients then it fulfills the originality. The very first munch with paper cone well reminds the relaxed time spent at beach. If making this for Navratri festive, skip onion/chat masala as you wish...This is the perfect sundal for evening snack during this weekend I guess...

Manathakkali Kai Kara Kuzhambu | Night Shade Green Fruit Gravy | | Puli Kuzhambu

 Nowadays getting this keerai/green leaves bunch in local market n luckily saw one with lot of green fruits(FRESH!!! FRESH!!!), grabbed it immediately by keeping this gravy on mind. I came to know about this dish when I stayed in hostel for my Under Graduation. 10 days once can except this gravy from our cook and only few like me dare to taste this becoz of its bitterness...After that I never tried neither no one prepare it for me. When I googled I couldn't find the exact one (Some vathal kulambu recipes are there) so I used the steps I follow for Araithuvitta pavakkai puli kulambu. Wow I got the perfect taste how our hostel cook make n luckily with no bitterness (I tasted the raw fruit before making gravy which bitters much). Hope I had given a very healthy and greeny fruit gravy a best medicine for ulcer/diabetes/healing wound so and so, also called as medicinal plant (Hierba Mora in Spanish)...I rarely prefer dried manathakkali vathal becoz of its high salt content but if you don't get fresh fruits then try with dried once make sure to rinse well in water to get rid of extra salt before making gravy.

Lettuce Paratha with Matar Gravy | Spinach Paratha with Peas Gravy

Lettuce Paratha? It was new for me unless I made it sudden for our guest. One week ahead I invited our bachelor family friend to dinner, totally forget that and involved in my experiments No bake parle G cake and Left over bread cookies that day. He called n reminded 30mins before coming home. Stumped for a minute, don't know what to do and checked what's there in the fridge. Salad lettuce was there, so quickly I made this paratha and onion raitha before he reached home...Surprisingly it came out well, the other day I mixed some left over spring roll stuffs with lettuce, really it enhanced the first attempt lettuce paratha taste. Very healthy recipe for kids, also gud for all age groups...

This is our 10yrs of friendship (completed 10years last month) which I would like to share it with you all. She is one of my care takers. When I started living in Chennai, she searched house for me, cleaned and completed everything for house warming…She never forget all our B’days, Wedding day or any family events, She call n wish wherever we are…Our friendship starts as neighbor in Chennai, but now she resides in Kerala her hometown. Chicken Nuggets with Homemade Avocado Dip

Most of my kids day out is with my hubby. Once in a blue moon :) I take them out to the nearest park. I got few park friends and few months back one of them asked for chicken nuggets  (Sorry for the delay :). I am giving both the baked and shallow fried version with homemade avocado dip. Please choose your choice. To my perspective both are equally good.
