Chicken Tikka Recipe



Ingredients
Boneless Chicken - 500gms
Bell Pepper (Capsicum), Tomato, Onion - 1 Cup (Cut in to cubes) - Optional
Thick (Hung) Yogurt - 2 Tbsp
Lemon Juice - 1/2 Tbsp
Ginger Garlic Paste - 1 Tbsp
Red Chilli Powder - 2tsp

Eggless Mango Mousse

Ingredients
Fresh Mangoes - 3 Number or Pulp 1n1/2 Cups approx
Dark Brown Sugar - 3 Tbsp (Opional)
Sugar - 1/2 Cup or More
Heavy Whipping Cream - 240gms
Gelatin - 1 Envelope

Method
Peel the mangoes, remove the flush part and grind to make puree. 


Mix with sugar heat the mixture when it starts boiling remove from heat. Dissolve the gelatin in cold water, microwave it for 30 secs(or till the gelain dissolves) and add to the puree.




Allow to cool meanwhile prepare the whipped cream. Fold with the mango puree/gelatin mixture. Refrigate in decorative bowls for 45mins to set well. Serve Chill.
Note:
1. If the mousse is not falling while you flip keep in room temp for a while then separate the bowl and mousse with spatula/knife and then try to flip it.
2. Adding brown sugar enhances the color.

Here comes fool proof banana bread recipe I am practicing for years, you can add any nuts you wish or skip it. The bread has the goodness of wheat, banana, apple and honey. A slice in the morning meets the fulfillment and I have recently updated the pictures and recipe to go for 9X5 inch loaf pan. This week kids are taking it for school snack.

Eggless Mango Ice Cream | Homemade Mango Ice Cream with Fun toppings

Fresh Mango - 2 Big Numbers or Puree 1 Cup

Homemade Bread Crumbs




Any type of Bread - 4 Slices

Method

Today I thought of preparing potato pan cakes as an evening snack, but I don't have bread crumbs which is the main ingredient to give crispiness for the pan cakes. So I instantly (5mins) made the crumbs. I toasted the bread using ordinary bread toaster.


By hand just made into few pieces and microwaved it for another 90sec. Cool and powder it in the mixie. Now bread crumbs are ready to go.

Tomato Rice in Pressure Cooker | Thakkali Sadam Recipe

Very easy and quick one pot meal/lunch box special using tomato even when you don't have any veggies at home. The mint shown in the above picture is something special, it grown in my home :-)

Ingredients
Rice - 1 and 1/2 Cups
Tomato - 4 Numbers (Medium) or 3 Large
Onion - 1 Number (Jumbo US Onion) or Shallots - 12-14 Numbers
Green Chili - 1-2 Numbers
Turmeric Powder - 1/4tsp
Optional Garam Masala Powder -1/2tsp
Red Chili Powder - 2tsp or More
Curry Leaves, Mint Leaves and Coriander Leaves - Few
Mustard seeds - 1/2tsp
Chana dhal - 2tsp
Oil or Butter or Ghee,Water and Salt - As Required

To Grind
Ginger - 1 Small Piece (2 Inch)
Garlic - 6-8 Cloves Small size or large 4
Cinnamon - 1 small piece (1 inch)
Cloves - 4-5 Numbers
Fennel Seeds  - 2tsp
Kaskas - 1tsp
Shallot - 1 (Optional)

Method
  • Soak the rice for 30 minutes at least. 
  • Meanwhile make the masala/gravy for the rice.
  • Grind the ingredients in "To Grind" list with little water to a fine paste. 
  • Heat oil/ghee when its hot add mustard let it splutter completely.
  • Add chana dal, when it turns light brown add chopped onion, green chili, curry leaves and few salt when cooked well add the ground masala paste, saute till reaches nice aroma 3 minutes approx.

  • Then add chopped tomato, red chili powder, garam masala powder(if using) and turmeric powder.
  • Add 1/2tsp salt cover the lid in medium flame cook for 5-8 minutes, when tomato mashes well add the chopped coriander and mint leaves suate for a minute or two.
  • Now add the tomato masala/gravy in the pressure cooker with rice + 31/2 cups of water (including water in the gravy), check the salt, you can add more red chili powder if needed and allow 3 hisses.
  • When pressure goes off serve it with onion cucumber raita or pickle or with potato chips or potato poriyal or roasted potato.
  • Also tastes divine with ghee or yogurt.
Note:
  1. I use ponni boiled rice but any rice work for this.
  2. The gravy when you taste while mixing with rice it should be bit tangy otherwise this rice won't taste good, so add well ripen tomatoes as mentioned.

Homemade Yogurt | Curd

Ingredients
Whole Milk/2 % reduced fat milk - 1 Liter
Yogurt/Curd - 1-2tsp

Method
  • Here is a tasty homemade yogurt.
  • Boil the milk in medium heat when starts foaming, reduce the flame(simmer it) and stir on/off for few mins (If the milk gets thicker and thicker the curd will be better).
  • Allow to cool, check by immersing your finger in the boiled milk, if you are able to tolerate the heat (lukewarm temperature) then add unflavored yogurt/curd (Adding too much gives sour taste)into the milk, stir well.
  • Cover with lid and store it in a warm, dark place (in the Oven/Microwave) for 5-6hrs( get sour taste when you keep at room temp for more than 8hrs).


Note:
1. I have used 2% reduced fat milk
2. If the weather is too chill then preheat the oven and keep the milk.
3. Better to use stainless steel vessels.

Whipped Cream using Hand whisk


Ingredients
Heavy Whipping Cream – 1 Pint(474ml)
Vanilla Extract – 1tsp
Powdered Sugar – 1/2 Cup or More

Method
Beat Cream, Vanilla extract,  Half of the sugar in a large bowl using hand whisk for few minutes. Add the remaining sugar and beat continuously till its fluffy/foam(12-15mins).

Note:
This is stiff peaks some recipes call for soft peaks for that when the cream starts leaving tracks, its the right time to stop whisking.

Shredded Coconut

I used to buy whole coconut from Indian grocery store (We can break and check the quality). I bought this coconut scrapper/shredder from Chennai, which sticks to the counter top. Hold the coconut in one hand over the scrapper, in another hand rotate the handle clockwise, will shred a coconut in 5minutes. Pack & freeze it in a freezer bag (Keeps fresher for more than 15days).
