Dry roast the ingredients mentioned earlier for the homemade spice mix, let it cool completely.

Meanwhile get ready with other ingredients.

Powder the spice mix with raw sugar to fine powder (Pic 1).

To the same powder add walnut (Pic 2) and grind coarse (not to fine).

In a mixing bowl add this spice mix walnut powder (Pic 3), ragi flour (Pic 4), wheat flour, cocoa powder (Pic 5), baking powder, baking soda and salt (Pic 6).

Mix all together and the mixture looks like shown in Pic 7.

In another bowl prepare the wet ingredients.

Take well ripen banana and mash it in whisk, little chunks are fine in it.

Add flavorless oil (Pic 8) and egg or curd to the mashed banana.

Give gentle stir after each addition.

Now add melted chocolate (Pic 9), milk or buttermilk, in the video I cleaned the spice mix powdered jar using this liquid and added to the muffin batter.

Once the wet ingredients are combined well(Pic 10), do pour this mixture over dry ingredients mixture (Pic 11).

Mix well with no traces of dry flour, I used hand whisk as shown in video and pictures but any electric mixer speeds up the process.

Check the muffin batter consistency (Pic 12). Sometimes just 1 tbsp milk or buttermilk may be sufficient and you may need more depending on the flour texture.

Once batter is ready, do equally drop in each hole of oil greased muffin pan.

Also top the muffins with chopped nuts or mini chocolate chip, refer picture below.

In preheated oven bake at 375 F / 190 C for 12-15 minutes, refer picture below.

Once done, cool on a wire rack and remove gently from the pan.

Do serve or store in air tight container for later use.
