Blueberry Popsicle Recipe

Ingredients
Ingredients for the Blueberry Compote
Fresh Blueberries - 1.25 Cups
Water - 3 Tbsp
Milk - 1/2 Cup
use just to grind the cooked blueberries
Regular Sugar - 1 Cup
Lemon Juice - 2 tsp
Ingredients for the Blueberry Popsicle
Thick Blueberry Puree - Prepared above
Heavy cream - 1 and 1/2 Cups
Vanilla Extract - 1 tsp
Salt - A Pinch
Instructions
How to make Blueberry Compote / Puree
Combine blueberries, water, sugar and lemon juice in a small saucepan.
You can immediately cook or rest at least 2 hours in refrigerator (stir on and off) and cook later.
Cook over a medium heat for about 15 minutes.
This is the blueberry compote if the recipe calls for.
But here for the popsicle they are grinded to fine puree.
Keep stirring often and if you have potato masher you can mash while cooking so it mashes soon.
Once cooled completely, pulse in the food processor with 1/2 cup milk and strain the seeds.
How to make Blueberry Popsicle
Combine Heavy cream , vanilla extract, salt and blueberry puree all together.
To make popsicle like shown in picture below with blueberry swirls here and there, you have to keep the first blueberry extract separately.
Add cream, second time extracted milk mixed puree, vanilla extract and salt.
Give a good stir so all has even color.
Finally add the preserved thick first extracted puree and with fork gently stir clock wise.
Adjust sugar by adding some powdered sugar here right now.
That's it, pour the mixture in the popsicle molds.
The plastic cups shown here are handy for birthday or summer pool parties.
Once poured in it refrigerate for 2 hours first.
Then insert the popsicle stick, and wrap them all covered.
Again freeze it for 2-3 hours or overnight.
Before serving show the cup over running water to unmold.
