Cauliflower Ghee Rice Recipe | Quick Lunch Box Special

Cauliflower Ghee Rice Recipe

Cauliflower Ghee Rice is a quick one pot meal , you can make it under 15 minutes if you have cooked rice in handy. For this recipe either you can use freshly cooked or leftover rice and I use sona masoori but you can try this recipe with basmati rice or boiled rice as well. My daughter likes to have rice for lunch so I prefer any veggies mixed rice and even my egg fried rice will have broccoli :-). Do check School Lunch Box Ideas Recipe Collection HERE.

Ingredients for Cauliflower Ghee Rice

Cooked Rice – 1 Cup (Sona Massori Rice Or Basmati or just replace rice with cauliflower or paneer for paleo diet)
Shredded Cauliflower – 1/2 Cup
Frozen Veggies like Corn or Peas – 1/4 Cup (Optional)
Bay or Brinji Leaves – 2 Numbers
Ginger and Garlic Paste – 1.5 tsp
Cumin or Mustard Seeds – 1/2 tsp
Pepper Powder – 1/2 tsp
Green Chili – 2 Numbers
Green Onion – 1 Bunch (Optional)
Turmeric Powder – 1/2tsp (Optional)
Ghee – 2 Tbsp

 How to make Cauliflower Ghee Rice

  • You can use either freshly cooked rice or leftover rice to make this one pot meal.
  • Keep all the ingredients ready.
  • Heat ghee in a pan.
  • Add bay leaves, cumin seeds, when the seeds starts splutter add ginger garlic paste.
  • Saute till nice aroma attains from the ginger garlic paste.
  • Now add green chili’s and saute till they wilt.
  • Finally add shredded cauliflower , pepper powder and salt, cook covered for 5 minutes in medium flame.
  • You can sprinkle little water but it is not necessary cauliflower cook in its own moisture.
  • Once cauliflower cooked, add the cooked rice and optional green onion.
  • Just mix all together and at last adjust salt.

Notes

  1. You can skip rice completely for Paleo Diet.
  2. Feel free to add more veggies in this rice.
