I prefer healthiest version in each and every product (Whole grain Bread, Multi grain Flour, Whole grain Pasta etc). When compared to regular pasta whole grain pastas are rich in fiber and other vitamins. I am not an addict to Pastas. I pack lunch with Variety Rice and Poriyal for my DH in alternate weekdays. He even dislikes and requested me to stop rice. So nowadays pasta is included in our weekday lunch special :-). Today I am here with Whole Grain Penne Veggie Pasta Recipe…
Ingredients
Whole Grain Pasta – 200gms
Assorted Veggies(Carrot/Beans/Peas) – 1 Cup
Avocado – 1 Number
Tomato – 2 Number
Garam Masala Powder – 1tsp
Red Chili Powder – 1tsp
Onion – 1 Number
Garlic – 3 No.(Optional)
Olive Oil – 3/4 Tbsp
Salt and Water – As Needed
Assorted Veggies(Carrot/Beans/Peas) – 1 Cup
Avocado – 1 Number
Tomato – 2 Number
Garam Masala Powder – 1tsp
Red Chili Powder – 1tsp
Onion – 1 Number
Garlic – 3 No.(Optional)
Olive Oil – 3/4 Tbsp
Salt and Water – As Needed
Method
-
Chop and pressure cook the vegetables for single whistle.
-
Add water and cook the pasta in open pan for 11 mins or as directed.

- Heat oil in a pan add chopped garlic when nice aromas attains add chopped onion.
- When turns pinkinsh brown add chopped tomato and avocados.
- Add masala powders and saute well.
- Add salt and cook till tomato mashes well.
- Now add the boiled veggies and pastas.

- Mix well and serve hot.

Note:
Can reduce tomato and add tomato sauce.
