Pumpkin Halwa | Pumpkin Honey Sandwich Spread

Halloween and Diwali are coming up, I wish to post some desserts, so today’s recipe is pumpkin spread for sandwich. This is our authentic halwa with less ghee. My kids enjoyed much when I used this as a spread for bread. I have substituted pure honey in place of other artificial sweeteners, so I am sure that this healthy pumpkin sandwich make you to give a try…

Ingredients

Pumpkin – 1 lb (450 gms) or grated – 3 Cups
Pure Honey – 2 Tbsp (you can replace with sugar)
Regular Milk – 3/4th Cup
Fat Free Condensed Milk – 1/4 Cup (Optional)
Powdered Nuts (Almond/Cashew/Pista) – 1 Tbsp
Ghee- 2 tsp
Turmeric Powder or Saffron – 1/2 tsp or as needed
Cardamom Powder – 1-2 tsp

Method

  • Remove the seeds n skin from Pumpkin.
  • I used veg peeler which was easy to remove the outer skin.
  • Grate the Pumpkin (Use big size grater).
  • Heat ghee, if like to add whole nuts add at this point and saute the grated pumpkin along with it for 2-3 mins.
  • Pour the milk n bring to boil.
  • For shortening the cooking process, I pressure cooked it for 1 whistle and again transferred to the wide pan.
  • When most of the moisture evaporates, add Condensed milk and powdered nuts saute till it thickens more.
    Picture 1 – Half Peeled pumpkin n fat free condensed milk beyond that.
                  2 – Grated Pumpkin and Pure honey.
                  3 – All most cooked pumpkin with powdered nuts n condensed milk.

  • Add Honey and Turmeric Powder or saffron or any orange/red food color.
  • Finally add cardamom powder and when all roll together, put off the stove.
  • Toast the bread, apply the halwa/jam over it and cut diagonally…

Picture 1 – Adding Honey.
2 – Rolled together.
3 – Applied over toasted bread.

Notes

  1. Add more ghee to attain store buy halwa texture, but I didn’t do so…
  2. If not adding condensed milk add more honey/sugar for taste.
