School Lunch Box Recipe Ideas 4

My son is a very picky eater, and he likes very few vegetables. So in today’s school lunch box, I used beet-cooked water to make the chapati dough since chapati is his favorite. The rest of the dishes are detailed below.

Today’s School Lunch Box Menu has

  • Homemade Rose Baklava (Its my first try)
  • Raw Banana Stir Fry / Vazhakkai Poriyal (Recipe Follows)
  • Paneer Butter Masala (added few green peas) and
  • Soft Beets Chapati

How to make Soft Beets Chapati

I usually save the pressure-cooked beet water and add it to the chapati dough instead of regular water. Additionally, I use this beet water in preparations such as ammini kozhukattai, pink pasta, sambar, etc. If you like, you can also add spices to make masala chapati by mixing them into the dough.

You can also consider consider some other North Indian dishes for Chapati.

Raw Banana Stir Fry / Vazhakkai Poriyal

Ingredients

Raw Banana – 2 Numbers

Onion – 1 Medium size

Grated Coconut – 2 Tbsp

Sambar Powder or Chili Powder – 1tsp

Green Chili – 1 Number

Turmeric Powder – 1/4tsp

Curry Leaves – 1 Sprig

Salt – As Needed

Tempering

Mustard Seeds – 1/8tsp

Chana Dal – 1 Tbsp

Oil – As Needed

Preparation

  • Wash, peel off the skin, and chop the raw banana into even cubes.
  • Add the chopped vazhakkai in cold water until use.
  • In a pan, add oil and temper mustard seeds when it’s hot.
  • Once done, add chana dal and sauté until golden brown.
  • Now add finely chopped onion, a pinch of salt, and sauté until translucent.
  • Now add green chili, curry leaves, turmeric, and chili or sambar powder.
  • Sauté the powders for a minute over low flame.
  • Now add chopped raw banana, necessary salt, and give a nice mix so that the masala coats all over the banana.
  • Cover and cook for 8-10 minutes over medium flame.
  • Do sprinkle water if needed.
  • Once cooked, add shredded coconut and remove from the flame.
