Today I am here with the classic Vada Pav with green chutney recipe. Vada pav or Wada Pao is a popular street food from Mumbai / Maharasthra, the Western part of India. It has deep fried or non fried potato filling or dumpling (called as Vada or Wada) placed or stuffed inside bun/rolls (called as pav) which is sliced almost half through in the middle and its accompanied by two yummy chutneys ie the dry garlic red chutney and green chutney and also eaten with green chili pepper. Is Vada Pav Unhealthy?

The deep fried potata vada or batata vada is considered unhealthy and I mostly make it in the appe pan / Paniyara Kal by drizzling few drops of oil other than that the combination of other herbs and spice ingredients makes it healthy. Also do make Whole Grain Pav buns at home for healthy intake.

What are necessary to make Vada Pav?

To make vada pav all you need are the below listed components and do refer the above picture as well.

  • Homemade or Store Bought Soft Pav/Rolls/Buns
  • Potato Vada / Batata Wada
  • Dry Garlic Red Chutney Powder
  • Green Chutney prepared as mentioned above.
  • Sweet Chutney (Tamarind Chutney, which I skipped here)

Can I skip any components mentioned in the recipe?

As of now I skipped sweet tamarind chutney since kids are not familiar with its taste. But I will add its recipe in future. Other than that I feel the rest of components are mandatory and in the green chutney recipe you can reduce or skip mint if you feel its smell overpours.

How to make Green Chutney?

Green Chutney or Coriander or Hariyali Chutney uses raw herbs and some spices blend all together with lemon juice and water. This yummy multi purpose chutney tastes good when its consumed fresh and goes well with vada pav or any chaat or used as sandwich filling.

Green Chutney Ingredients

Coriander Leaves – 1 Cup
Mint Leaves – 1/3-1/2 Cup
Green Chili – 2-3 Numbers
Cumin Powder – 1/2tsp
Lemon Juice – 1 Tbsp
Chat Masala Powder – 1tsp
Black Salt – 1/4tsp
Salt & Water – As Needed

  • Clean and destem coriander (can use tender stems) and mint leaves.
  • Add cleaned herbs (Pic 1), green chilis (Pic 1) , all the powders (pic 2), lemon juice (pic 3) and salt
  • Blend them all together with little water (as needed) to make a little thin paste (not too thick nor too thin) as shown in the picture 4 below.

How to assemble Vada Pav?

  • Toast the buns/pav in the pan with butter or ghee before assembling and toasting enhances the taste and flavor of this vada pav (when you toast the bun, it shrinks so for picture perfect I skipped in the displays).
  • Slice the bun in the center and make sure the other end is in intact and don’t split into halve (Pic 2).
  • Apply all the chutneys/dip prepared (Pic 3 & 4).
  • Can press the potato vada gently (Pic 5) before placing inside the pav so that you feel easy to eat.
  • Add green chili on top (Pic 6), drizzle some chutneys on top and do serve.
