Lunch Box Recipes Idea 3

After a 5-day school break, the kids resumed school on Wednesday, and being a bit lazy, this is what I packed in their lunch box. This is the 3rd recipe for the Lunch Box series which I have started recently @nithakitchen. On the picture above

Do you season Cucumbers?

If you want to season, you can, but the seasoning mix contains salt, which makes the cucumber or any veggies release water. So I just serve them plain.

Millet Mini Idlis

I have a few millet recipes on the blog, and the idlis shown above are particularly made of barnyard millet and flax seeds. You can refer to the very similar recipe on the blog HERE.

Peanut Chutney

At home, we love anything made with peanuts. This chutney is a killer combo with idlis and also tastes great with rice because we add tamarind. If you ask me whether I have several chutney varieties with peanuts, honestly, this is the best and only recipe I have on the blog, which never makes me try a different dish.

Recipe Description In Short

  • Heat oil in a pan, add cumin seeds, whole pepper, coriander seeds, sauté a minute or two.
  • Later add all the remaining ingredients like sliced onion, garlic , chilis, and optional curry leaves.
  • Grind sautéed mixture with tamarind juice, blanched peanuts (Pic 7), water and necessary salt.
  • Grind the chutney to smooth paste (Pic 8) and add water or tamarind extract as needed while grinding.
  • Finally temper the chutney.
