Salt and Pepper – As Required
Sambar/Red Chili Powder – 1tsp (Optional)
Homemade Puff Pastry/Store bought sheet – 4 No
Assorted Veggies – Peas/Onion/Carrot/Tomato (Optional)
Cut the eggs vertically in to halves, sprinkle pepper and salt over that.
Saute veggies with little oil and sambar powder, par cook is enough.
In the puff pastry sheet keep the egg (bottom facing down) with some veg filling, cover, place this in a pan and bake it in the oven(450° F) for 10mins or till it turns golden brown.
Can coat beated egg over the puff(before baking refrigate for 10mins to the coating to set well, this gives golden color to the puff). I made these puffs with homemade puff pastry. I have uploaded an easy method of making puff pastry with step by step tutorial in another recipe. Do check it HERE.
