Egg Kothu Parotta Recipe

Egg Kothu Parotta Recipe

Ingredients

Cooked Parotta – 3 Numbers
Egg – 3 Numbers
Onion – 1 Number (Medium)
Tomato – 1 Number  (Medium)
Red Chili Powder – 1tsp
Turmeric Powder – 1/4tsp
Green Chili – 1 Number

Chicken Gravy – 3 Tbsp
Chopped Coriander(Cilantro) & Curry Leaves – Few
Salt – 1tsp
Oil – 1 and 1/2 Tbsp
Mustard seeds – 1/2tsp

Method

  • Tear the parotta in to pieces.
  • Heat oil in a pan temper mustard seeds, add chopped onion, green chili and curry leaves.
  • When onion turns golden brown add tomato and saute till it mashes well.
  • Now add coriander leaves, red chili and turmeric powder, salt, parotta pieces stir well then add egg one by one.
  • Keep stirring till egg gets cooked.
  • Add the left over chicken gravy then remove from heat when parota absorbs the gravy.
  • Finally garnish with coriander leaves.

Note:

Add mix of chicken masala powder and garam masala powder instead of chicken gravy which is optional.
