Ragi Puttu Maavu Sweet and Savory Recipes

Today’s recipe is obviously healthy and filling Ragi Puttu Maavu / steamed ragi flour snack including both sweet and savory versions, which is my grandma’s special recipe. When I were there in her place during school quarterly vacations, Puratasi / Navarathri / Navratri usually comes around and we

fast for the whole day. So this is one among the neivedhyam she prepare and offer god with usual pooja in the evening. This puttu is simple to make and I am presenting this for the 8th day of Navrathri (Saraswathi Pooja)… May God bless you with good Health and Wealth…

After couple of years recently I got a chance to update the recipe with better picture. Nowadays this turned to be my kids favorite which I keep it ready for them to have it after the school ie after school snack.

Ragi flour

Ragi Millet / Kelvaragu, is very rich in calcium, also it is good for diabetic patients and all age groups, this millet also has more health benefits and taste wise so good…I either have this millet as wholegrain or in flour form, the wholegrain I add it up in the idli dosa batter and usually flour goes with instant tiffin like adai, dosa , Idiyappam or puttu mostly. Ingredients

Ragi Flour – 2 Cups
Water – 3/4th Cup

For Sweet Puttu

Steamed Ragi Puttu – 1 Cup (detail follows)
Shredded Coconut – 1/4 Cup
Sugar – 1/4 Cup
Cardamom Powder – 1 tsp

Savory Puttu

Steamed Ragi Puttu – 1 Cup (detail follows)
Oil – 2 tsp
Whole Red Chili – 1 Number
Mustard Seeds – 1/2tsp
Salt – As Needed
Chana and Urad dhals – 1/2 Tbsp each
Curry Leaves – 1 Sprig
Chopped Onion – (Optional or use on usual days)

How to Steam Ragi Flour

  • Warm the water, when it is mild hot add to the ragi flour and make crumbled mixture (Use Spatula).
  • The dough should be moist and you should not see any dry flour out there.
  • Spread them all over the idli plate and steam this in idli pan for 5-7mins (or the time it takes to cook idli) with covered damp cloth as shown in the picture.
  • You can use puttu maker too.
  • The ragi color turns dark brown, shiny when they cooked well, make sure the bottom/inner dough also cooked well (if there is any raw uncooked dough continue steaming for 1 or 2 minutes as needed).

Method For Sweet Puttu

When the steamed puttu is hot just mix Sugar, Cardamom powder and shredded Coconut, you can add optional ghee as well. thats it enjoy as it is or with banana.

For Spicy or Savory Puttu

  • Heat oil temper mustard and add all other ingredients in quick succession.
  • Finally add steamed puttu and mix well.
  • Delicious puttu is ready to munch 🙂

4 – Mixing sugar, cardamom powder and coconut for sweet puttu.

Here in the final outcome I served both sweet and spicy versions…

Notes

  1. Cover the cooked ragi puttu always, otherwise it easily get hard and dry when exposed to air.
  2. Cover the ragi mixture with damp cloth completely even on the top while steaming to get that softness.
