Eggless Chocolate Cream Cookies with Reduced Fat Version

I had my routine health checkup months back. The very friendly staffs treated my kids with pumpkin frosted cookies and chocolate chip cookies. I never failed to taste those after coming home, hmm as a blogger/baker immediately tried both at home. Both were success in my first attempt itself n already posted the Pumpkin frosted cookies. The second one it says chocolate chips but
couldn’t find any whole chips to bite, so I adapted my Old fashioned cookies recipe n its truly delicious. I prepared it several times as snack for weekend day out but couldn’t find time to click it…At last I made it J by filling whipped cream in between cookies like sandwich spread. Simple to make n I assure that you never go wrong anywhere…

Ingredients

All Purpose flour (Maida) – 1 Cup
Unsalted butter – 4 Tbsp (replace with Yogurt for reduced fat version, See Note 2)
Baking Soda – 1/2 tsp
Dark Chocolate Chips/Morsels – 1/2 Cup
Milk – 2 Tbsp (As Needed)
Salt – Pinch

Method

  • Melt the butter (Just few seconds, can microwave too), remove from heat then add chocolate chips and stir well to dissolve completely (Picture 1).
  • Mix all the dry ingredients in a separate bowl. Add this flour mixture to the chocolate butter mixture in batches.
  • If needed sprinkle regular milk and roll to soft pliable dough as shown in the picture 2.
  • Cover and rest the dough in fridge for 30 minutes.
  • Either make small balls (Picture 3) in hand or roll to 1/2 inch dense dough and make desired shapes (I used round shaped cap (Picture 4).
  • Place this in cookie sheet lined with parchment paper (Picture 5), bake in preheated oven at 350°F for 10-12 minutes, when the bottom of the cookies turn light to medium brown then remove from oven (Picture 6).
  • Cool and apply whipped cream or any other filling you wish over a cookie and place another over top of it. That’s it chocolate cream cookies are ready to go…

Notes:

  1. You can use any sweetened/semi sweetened/unsweetened chocolate chips so add powdered White/Brown sugar according to your taste.
  2. For butter free version please replace butter with yogurt and in this case milk is optional.
  3. Use good quality chocolate bits.
