Ladies Finger fry (Poriyal) is our family favourite. This is one among the quick disappearing recipe. Vendakkaai Poriyal may come under simple recipes category but i want to share my way of getting non sticky okra with less oil.
Ingredients
Okra/Lady’s Finger – 1/2 kg
Cooking Oil – 1 and 1/4 Tbsp Salt – As Required
Shredded Coconut – 2 Tbsp
Chopped Onion – 1 No
Sambar or Red Chili Powder – 2tsp
Mustard Seeds – 1/2tsp
Chana Dhal – 1 Tbsp
Curry Leaves – Few
Method

Clean the ladies finger and wipe it with damp cloth.

Cut in to thin slices.

Heat an empty pan, Dry fry okra in sim (don’t add oil) for 2 or 3 minutes.

Add 3/4th Tbsp of oil and again fry in low to medium flame approx for 15 mins or till okra become tender.
- Stir in regular intervals.
- Heat 1/2 Tbsp oil, splutter mustard seeds.
- Add Chana and Urad dals, fry till golden brown.

Now add chopped onions, Sambar powder, fry till onion changes color.

Finally Shredded coconut, ladies finger, salt and remove from heat.
