Healthy Baked Spinach Beans Fritters Koftas balls for curries

This healthy Baked Bean fritters are prepared with homey ingredients and instead of baking do shallow fry or air fry as per your choice. I have given gluten free options for

bread crumbs, so and so…These healthy fritters can have as it is with hot coffee or tea, also be used in kofta curries, spaghetti sauces or as pizza toppings etc. I have slightly different deep fried meat less (veg) malai kofta balls recipe here…I usually add/top the mini version of these koftas in vegetarian pizzas and tastes awesome…The color looks dull but it tastes great and just melts in mouth. below and I am going to come with the pizza recipe in very next post…

Baked Spinach Kidney Beans Fritters Veg Kofta Recipe

Ingredients

Red Kidney Beans/ Black Beans/Hyacinth Beans – 1 Cup
Chopped Spinach – 1/2 Cup
Onion – 1 Number (Medium Size) or 3/4 Cup
Fried Onions – 2 Tbsp (Optional)
Red Chili Powder – 1.5 tsp
Garam Masala Powder – 1 tsp
Bread Crumbs – 1/4 Cup or More as needed to hold the shape (Replace with any flour)
Chat Masala Powder – 1 tsp
Oil – 2 Tbsp (For Vegan Option or Use Vegan Cheese)
Shredded Cheese / Paneer – 1/2 Cup (If using skip oil)
Himalayan / Regular Salt – As Needed
Seasoned Salt – 1 tsp (Optional)
Italian Herbs – 1 tsp (Optional)

Yields – 30 grams of 20-24 balls

Baked Bean Fritters Preparation

  • Soak beans overnight or at least 8 hours (Pic 1).
  • It doubles after 8 hours so it gives 2 cups of beans (Pic 2).
  • Wash them thrice with generous water.
  • With a tsp of salt and necessary water pressure cook for 3-5 hisses.
  • Drain the excess water (Pic 3) and pat dry in kitchen towel for another 5 minutes, this is very important step.
  • Blend this to fine and add it to a mixing bowl (Pic 4).
  • Crush the fried onion to small pieces.
  • Mix ground beans, chopped or pureed Spinach (Pic 5& 6), fried onions or finely chopped Onion (Pic 7) , bread crumbs, red chili and garam masala powder, Chat masala powder, seasoned salt & regular salt (Pic 8 ).
  • Mix them everything well so all masala coats well (Pic 9).
  • Finally add cheese or paneer (Pic 10) or oil and if feel the mixture is gooey do adjust with breadcrumbs.
  • Then make gooseberry size or medium lemon size balls (Pic 11) or tiny balls (size is as per the requirement).
  • Place them on parchment paper placed baking pan.
  • Bake at 350°F for 15-18 minutes or till bottom turns golden brown (Pic 12).

Variations

  1. When you soak 1 cup beans it yields 2 cups so you can half the quantity as per family needs.
  2. You can deep fry or shallow fry this balls.
  3. You can add finely chopped capsicum or green chili’s as per your taste.
  4. If you want you can spray little oil before baking.
  5. Also you can lightly saute onion and spinach with a tbsp of oil if like so…
  6. For gluten free option instead of bread crumbs do use corn flour or rice flour but a less quantity just to bind the dough.
  7. In Video i used Ponnanganni greens from my garden.
